I Looked Out the Window and What Did I see…….

“One piece of popcorn popping on my apricot tree. ” I know that spring has sprung for many of you friends and family out there but it is just starting here in Paradise!!  Yeah!!  The grass is a brilliant green, the daffodils and tulips (or three lips as we sometimes call them in the Clawson family) are blooming, and the geese are back from their long winter away.  The other day James and the kids were getting the gardens ready for planting and I was out inspecting every tree to see if they made it through the rough winter.  Every tree survived.  Wow!!  We couldn’t believe it after seeing what the mice did to the tree trunks this winter.  I think they stripped every fruit tree of the bottom 6 inches of bark.  James was sure they would all die, but I prayed for them and they are still with us:)  
I have one lowly apricot tree that had one lowly blossom on it and I took a picture to record it for posterity. It froze that night though, so I’m sure there won’t be an apricot this year.  I will probably never get many apricots from this tree.  They don’t do so well in Avon.  My neighbor down the road has a peach tree that produced a ton of peaches a few years ago, and she told me it was the first time in 30 years.  Well I’ve got plenty of time to see if this apricot tree will ever produce, but I can at least dream…..and make lots of popcorn treats instead!  
I thought it would be fun to celebrate my sole blossom by a week of popcorn recipes.  I’ve got a few old standby’s, but a new favorite also.  My goal is to post a popcorn recipe everyday or at least everyother day.  We’ll see.  So on to the first popcorn treat.  This one came from a blog I have been following for a while now.  Click here to go to her blog.  Hot Off the Garlic Press. She posted this recipe a few weeks ago and it has become a hit around our house.  It is real easy and quick, and will be quickly eaten too.  I made it with Easter M&M’s and it was so cute and springy. 
 Hey if you have any great popcorn recipes send them my way.   I’m always up for something new and exciting, or maybe just an old standby I haven’t had in a while.  Popcorn is one of those thing I love having around when you’ve got company coming over.  There is nothing better than seeing your guests hovering over the popcorn bowl before dinner.  Who cares if it spoils there appetite.  Popcorn makes everyone happy!!
Sticky, Chewy White Chocolate Popcorn
8 c. popped popcorn
1 c. chopped white chocolate or white chocolate chips
2 c. mini marshmallows
mini M&M’s

Combine the chocolate and marshmallows in a pot over med. heat.  Stir until melted.  Don’t overcook or it gets a bit hard.  Pour over popcorn and stir until coated.  Let it sit a few minutes and then add M&M’s.  Stir quick because the candy will melt.  The faster you are the better.  Enjoy!!

    HI! I just recently was checking out Kiley’s blog and saw your blog there. Your kids are so big!!! I hardly recognize any of them! How is GHBC holding up?

    After my mission to Taiwan, I got my master’s at BYU, did a study abroad in China, met my husband there, got married, moved to Houston and I just had our first baby a week ago. It’s been a whirl wind but great! I hope all is well with ya’ll. I assume you are still living in your same house, right?
