Gingerbread Trifle

gingerbreadtrifleWhat kind of dessert do you make for Christmas?  I had this little conversation with my sister not to long ago.  She was having a luncheon with a huge group of friends and she was in charge of dessert.  She wanted to impress, and do something special for a Christmas party.  What to do!?  I’ve found I come up with the best recipes and ideas if I bounce them off my sister.  Sometimes just the act of talking the idea through out loud is all it takes.  The creative juices get flowing.  Sometimes I call my sister Hollie at about 5 o’clock at night just to see what she’s making for dinner.  She’s usually a little more prepared than I, and usually has something going.  I love her for that!  During our little, “What to make for dessert” conversation I told her about a Christmas a few years ago that our cousin Lindi had made 3 different trifles for dessert.  I think trifles are stunningly beautiful!!  The layers and colors, and the whole pudding-y yumminess!  And if you make more than one flavor you can usually  please everyone at the party.

My typical go to trifle is this Raspberry Trifle.  It’s actually my birthday cake every year too:) (Thanks Mom!!)  But here is another festive trifle suggestion.  And tomorrow I’ll post the 3rd trifle so you can make your own Trifle bar.  Serve these desserts with those little, shallow,clear plastic cups.  That way you can see all the layers.  Hollie’s dessert was a smashing hit, and since great minds think alike, I did the same thing for a Christmas party I went to last week as well.  Trifle is always a hit.  Enjoy and come back tomorrow for another festive trifle.

Gingerbread Trifle

Ingredients

  • Gingerbread Cake
  • 1/2 cup sugar
  • 1/2 cup butter
  • 1 eggs-well beaten
  • 1 cups molasses
  • 1/2 t. salt
  • 2 1/2 cups sifted flour
  • 1 1/2 t. baking soda
  • 1 t. cinnamon
  • 1 t. ginger
  • 1/2 t. powdered cloves
  • 1 cups hot water
  • Vanilla Custard (Or you can always use 1 large Jello vanilla Cook and Serve pudding.)
  • 3/4 c. sugar
  • 3 T. cornstarch
  • 2 T. flour
  • 4 c. milk
  • 3 egg yolks
  • 3-4 c. cream whipped and sweetened
  • sliced bananas

Instructions

Cake instructions: Cream butter and sugar well, about 3-4 minutes in an electric mixer. Add eggs and molasses. Beat well. Sift dry ingredients together in a separate and add to creamed mixture. Add hot water and beat until smooth. Pour into a greased and floured 9x13 pan. Bake 30-35 minutes minutes at 350. You can serve it with fresh whipped cream, sliced bananas, powdered sugar, or just plain.

Custard instructions: Mix all ingredients together in a medium sized sauce pan. Stir constantly with a wire whisk until the mixture starts to boil and gets thick. Take off heat and the pudding will thicken as it cools.

Trifle assembly: To assemble a trifle it's really just a layering of all the yummy ingredients. After the pudding and cake have cooled quite a bit you can start. I love using a big glass trifle bowl. It's stands on a pedestal, but any pretty glass bowl will work. Cut your cake into 1-2 inch squares. Make a layer of cake on the bottom of the bowl. Pour a good layer of vanilla custard, and then a layer of whipped cream. Repeat layers 1 or 2 more times depending on how much cake and custard you have. On the last layer top with cream and then sliced bananas right before serving.

    Lisa, I just made a ginger bread trifle yesterday for the family (21 people). I used (2) ginger bread loafs from Great Harvest which made it so easy. I made my own vanilla custard which is always good but my mother use to make lemon custard which I even like better. She also added banana’s to garnish along with whipping cream. DeAnna

      DeAnna I love the lemon custard idea!! That sounds wonderful:) So glad you’ve got all that lovely family together this week!! I loved seeing Tami and her family and ALL of Travis’ family there at church. Merry Christmas!!
