So this doesn’t have to be just a summer salsa. It’s actually really tasty any time of the year, but it just happens to be Summer and I used fresh corn on the cob so I’m callin’ it Summer Salsa. I am struggling to cook lately. We have eaten waffles, pancakes, egg on toast, and cereal way to many nights since school got out. I loose the cooking bug this time of year. If I can’t just throw it together I don’t want to make it. I don’t want to be inside. I could live in my strawberry patch 24 hours a day right now. Weeding, and talking, and just watching as everything grows. If you have a dinner suggestion that doesn’t involve breakfast food, pass it along. I know there are people out there who read this blog, you’re just a quiet bunch, but I need you now!! I need some summer inspiration! But until then I’ll just eat the entire bowl of this salsa. Summer Salsa
Summer Salsa
Everything is an approximation. Just add what you have and taste it before you serve it:)
4 avocados
1 chopped tomato or a big handful of cherry tomatoes
1 15 oz. can of drained and rinsed black beans
2 ears of corn cut off the cob
1 big handful of cilantro
drizzle of Extra Virgin Olive Oil
1/4 c. lime juice
1 t. salt
1 T. sugar
In a big bowl add all the veggies together. Don’t toss until you add the dressing ingredients. Stir very gently or you’ll have mashed avocados and it won’t look so pretty. Taste and adjust seasoning to your liking. That means add a little more………………. to make it how you like it! Love ya!

this is the first time that I have ever commented on a blog before, I love your recipes! You remind me of what my family is like, calling breakfast brekky, we totally do that! We love our garden too. Here is a super yummy recipe, we love it at our house and my 2 1/2 year old loves it. Sweet potato tin foil dinners
for 8 good sized foil servings
2# ground hamburger, fried, rinsed and drained
add 1 cup salsa and 1/2 packet taco seasoning, simmer until liquid evaporates
peel and cube (about 1/2 inch) 4 large sweet potatoes
grate some cheese (we like mozerella)
2-3 cups cooked and rinsed black beans
Directions
once everything is ready cut 8 pieces of foil, about 12 inces long.
spray each one with a little cooking spray
place 1/8 the potatoes, 1/8, meat mixture, 1/8 beans and sprinkle with some cheese. Wrap the tin foil up so nothing will spill out, place on a cookie sheet and cook at 350 for 25-35 minutes or on the grill on LOW heat for about 45 minutes (make sure low heat cause we have had some burn on the grill before)

One of my favorite EASY summer dinners (or any season easy dinners) is French Dip. I just grab a loaf of French bread, slice it lengthwise, then put a pound of thinly sliced roast beef evenly over both sides. Then put slices of non-smoked provolone cheese over both halves. I stick it under the broiler till the cheese is bubbly. Then just make a little packet of au jus (find it by the gravy packets at the store.) Pull it out of the oven, put the two sides together and slice it up. It makes my boys cheer when I make it, and it’s seriously all done and ready in 5 minutes. You probably have a really gourmet way of making French dip, but this one is a cinch if you need a quick meal some night.

Our favorite summer meal is PESTO! I have a recipe posted on this blog post. . . the same blog post with the incorrect recipe of your marinara sauce. I should probably correct that someday
My kids prefer it plain, but Steve and I like it with roasted pine nuts, cherry tomatoes and fresh mozzarella.

Next time you come to Costco, get a few bags of Food Should Taste This Good Multigrain chips and then either a container of hummus or a log of blueberry covered goat cheese (or both). That counts as dinner at our house! And have you made that fruit dip out of Nutella and Greek yogurt from Pinterest? Mmmmm. There’s your dessert!

We had this at a retreat I went to last weekend. For dinner, it was served as a build your own salad with spinach, mushrooms, red peppers, nuts, berries, etc. For lunch the next day, it was used in the wraps.
