GIngerbread Waffles

Even on a paper plate they are delish!

Who says you have to eat Gingerbread only during Christmas.  I love it in June.  I love it in Sept.  I love it especially on Sunday when I have a Ziploc of these little babies in my church bag.  I don’t even have children young enough to justify taking these to church to keep them happy.  I just love munching on them anytime.  If you aren’t a Gingerbread lover then……………….shame on you!  (I was told that once about not being a seamstress.  I didn’t take it too hard.  I still speak to the woman.)  I really think you should give these waffles a try.   They make your whole house smell wonderful.  It wakes teenage sons from their long winter naps, and creates smiles on every face in the house.

We always topped these with bananas and whipped cream as a kid, but we have now added the simple addition of Buttermilk Syrup too.  OK so it’s actually dessert for breakfast, but you deserve it!  My grandma used to make real Gingerbread for dessert when my mom was a kid.  She’d serve it with whipped cream with mashed bananas stirred in.  I’m going to try this one day, but as for now, not all my family wants bananas.  And can I blame them———I eat these waffles straight up during church with no excuses.  Pure unadulterated loveliness!

Gingerbread Waffles
1/2 c. butter melted
1/2 c. brown sugar
1/2 c. molasses
2 eggs
 1 1/4 c. milk
2 c. flour
1/2 t. baking powder
1 1/2 t. cinnamon
1 t. ginger
 1/2 t. salt
Mix all together with a hand mixer and place on a hot greased waffle iron.  Serve with Buttermilk Syrup (here’s a link to that recipe), sliced bananas, and whipped cream.  You may need to double the batch.  You’ll want leftovers.
Buttermilk Syrup from Hollie with a twist from my friend Jill
1 cube butter
1/4 c. corn syrup
1/2 c. buttermilk
1/2 t. baking soda
3/4 c. sugar
1/2 t. vanilla
Place in a big pot. This stuff foams out of control at first. Bring to a boil and then let boil until it turns a nice dark golden brown. About 8-10 mins. I usually 3 times the batch and it will make about a quart. I don’t 3x’s the butter though. Maybe only 1 1/2 cubes of butter to a 3 batch.

    Oh my!! Suga Suga Suga!! Got to give this a go :) Paul loves Buttermilk syrup! I love the gingerbread. We had pumpkin pancakes the other day. YUM. SHHHHHH I liked the few I threw chocolate chips in the best.. YUP for breakfast. Reminded me of a little bread shop that I love and miss in Cache Valley. They make the BEST pumpkin chocolate chip bread! Oh, guess what we had for dinner last night? Lisa’s famous chicken salad with Spicy Yet Sweet pecans :) It was a YUMMY hit :)
