Here is another favorite way with your fresh tomatoes and other goodies. Hollie made this recipe for us a few years ago, and I have become addicted. It is great as a side salad, served over steamy white rice or just by itself. It is so pretty, and yummy……….I’m going to have it for dinner!
Hollie’s Tomato, Cucumber and Avocado Salad
lots of chopped fresh tomatoes (every color)
seeded and chopped cucumbers (you can cut them long ways and then scoop the seeds out like you do a cantaloup.)
lots chopped avocado
A drizzle of olive oil and balsamic vinegar, salt and pepper and a little bit of sugar. Serve immediately. Thanks Hollie! This is a favorite.

A great way to serve this salad is with a small glass of Chardonnay. (So Mick says.)
