The Best Breakfast Ever

January 24, 2009 By: Lisa4 Comments

So breakfast is an absolute favorite at our house. Every Christmas morning at the Garner home we had these little pillows of love for breakfast. They are Ebelskiver. It was one of those wonderful holiday traditions from Denmark that my dad brought back from his mission. Last night James was inspired to make these little babies with a bit of a twist. (OK we were watching the Foodnetwork way to late, and we were drooling over these Ebelskivers.) This morning breakfast was delish. They were banana infused and Nutella stuffed drizzled with Buttermilk syrup and whipped cream!! I squealled they were so good. I am sorry all my blogging seems to be about food, but we remember great moments a lot of the time from what we eat. I will never forget the eclairs, and homemade marshmellows with Josh and Katie at Jackson Lake. You’ll have to ask Katie about those! Anyways I am including the recipe for the January Morning Ebelskivers. I hope someone makes a lovely memory with these. We sure did! Also I’m including a picture of a very happy Katie and her campfire eclair. It says 1000 words!

January Morning Ebelskivers
1 c. flour
1 c. milk
3 eggs separated
3 t. baking powder
1/4 t. salt
1 banana mashed
Beat egg whites until stiff. Beat the rest of the ingredients together until smooth. Fold in the egg whites. You have to have an Ebelskiver pan. It is a little cast iron skillet that has 7 holes. Grease the pan and put a spoonful of batter in each indentation. Place a 1/2 t. of Nutella in each little Ebelskiver. Spoon a little more batter over the top of the Nutella. Give them a few minutes and then flip over. When done sprinkle cinnamon sugar or powdered sugar on top. Serve with whipped cream and buttermilk syrup. (Recipe follows)
Buttermilk Syrup
1/2 c. butter
1/2 c. corn syrup
1/2 c. buttermilk
1/2 t. baking soda
Bring to a boil. Make in a big pot because it foams up a ton. Boil for about 5 mins until a thick caramel color. Take off heat and add 1/2 t. vanilla. This is to die for. Serve with anything. It is fabulous over fresh fruit, pound cake and peaches, or anything that needs a little sauciness.

Lisa, that is so crazy. Every Christmas morning for my entire life I have had Ebelskivers.
I don’t have any idea how it started with us, but we still do it to this day. My mom has six pans and a bunch of toothpicks on the ready and we stuff ourselves with spiral cut Ham and Ebelskivers with melted butter and homemade raspberry jam. Angie still doesn’t know what they are, but now I am totally validated that I’m not the only one that gets it.
I think I need to try that recipe! Ryan

So glad you have all of your posts organized so nicely and I spotted Ebelskiver down the side. I ordered a pan when they were half off at Williams Sonoma and decided they are going to be our new Christmas morning tradition. Your recipe is perfect since Steve always gets a jar of Nutella in his stocking. He might just need two this year.
