Mango Dark Chocolate Chocolate Chip Cookies

mangocookiesWhy is this so hard?  I feel as if I’m very unprepared for a piano recital, and all my favorite friends are there to watch:)  It’s been a while since I’ve posted.  Like months, and months, and months and I’m having a  hard time getting back.  But this recipe is a good one!!  So……I love Ruby Snap Cookies!  I love them!  Great cookie bakery in Salt Lake City.  The flavors, the frosting, the toppings, the names of the cookies, the packaging, the winking Ruby Snap girl- I love it all.  But I don’t live close.   I have a few bags of frozen Ruby Snap dough in the freezer, but I needed to make something similar to my favorite cookie.  My favorite is the Vivianna.  It’s a regular chocolate chip cookie with lots of dried mangos, dark chocolate chunks, and a hint of citrus.  YUM-O!  If you like chocolate covered orange sticks you’ll like these.

I have a few preferences when it comes to ingredients.  My husband thinks I’m a little crazy since I have 3 different 25lb. cases of chocolate chips in my food storage downstairs.  It’s important to have your milk chocolate chunks, and dark chocolate chunks, and your mini chips available at all times.  But when I make a cookie not just meant for the cub scouts or, the preschool kids, I love Trader Joe’s Semi Sweet Chocolate Chunks.  They are FANTASTIC!!  I love the way they melt.   I love the way they look in my cookie.  I think they are a superior chunk to anything else I’ve found.  And they’re only $1.99!!  And I love the Philippine Brand of dried mangos from Sam’s Club or Costco.  Oh and butter.  Follow those suggestions as you make your cookies and you will be happy.

The recipe makes a lot of cookies, but I love to scoop and freeze dough balls.  I scoop a 1.5oz scoop and it usually makes about 36 cookies.  We’ll bake some and freeze the rest.  They are great to pull out on a Sunday night, or when my kids bring friends over.  I usually freeze a whole batch of these and take to Lake Powell every summer and bake a dozen or so every night as we’re playing games on the houseboat.

These would be a great addition to your Christmas cookie platter this year.  Something different:)  And if you don’t love the dried fruit, please feel free to add what every your heart desires.  Make them your own.

*I’ve got links to the orange oil, and the dried mangos for reference.  I you’re like me, you need a picture of what some things look like.  I’m sure pure orange extract would work or if you’re really in a pinch I’ll bet orange zest would be AWESOME!

Mango Dark Chocolate Chocolate Chip Cookies

Ingredients

  • 1 lb. butter
  • 2 c. brown sugar
  • 1 1/2 c. white sugar
  • 3 eggs
  • t t. vanilla
  • 1 t. pure orange oil
  • 5 -5 1/2 c. flour (I use all 5 1/2 c.)
  • 1 1/2 t. salt
  • 1 1/2 t. baking soda
  • 4 c. chocolate chips
  • 1 1/2 c. chopped dried mango

Instructions

Cream butter with sugars. Add eggs one at a time. Add vanilla and orange oil. Stir in 3 cups of flour with the salt and soda. Add remaining 2- 2 1/2 c. flour one cup at a time. Add chocolate chips (And my absolute favorite chips are the Trader Joes Semi Sweet Chunks. They are AWESOME!) and dried mango. Chill dough. (Sometimes I chill and other times I am in a hurry. Do what you've got to do!)

Drop by tablespoons size onto cookie sheet. Bake in a preheated 350' F oven for 10-12 minutes. Makes approx. 5-6 dozen cookies depending on size of scoop. I love to scoop the whole batch and freeze the dough balls. When you're ready to bake place frozen dough on cookie sheet and bake for 14-16 minutes.

    Tried these last week. I took them to my niece’s farewell and got a ton of compliments ( even from the gourmet folks). We froze a dozen and made the last batch yesterday and they were even better! I love you for this recipe! Thanks again!!

    Yeah you’re back!!!!!! So excited to see a post:) I have looked the world over where do you find milk chocolate chunks???? You’re cute daughter waited on my daughter and I one day and i told her that i missed your posts. So excited to see she is serving the Lord. I am sure she will spread the gospel with her pleasing personality and most of all her testimony!

      Hi Kathy!!! I’m so sorry it takes me forever to respond to comments on my blog. I’m a slacker! Thanks for the kind words about Emma:) She’s doing great in Taiwan! As for the chocolate chunks, my very favorite brand in the whole wide world is from Trader Joes. And yes, I do drive all the way to SLC every once in a while to stock up. They’re cheap too! Like $1.89 a bag. I have an entire drawer in my kitchen filled with Trader Joes chocolate chunks! Let me know if you want me to pick you some up next time I’m there:)
